THE ATLANTIC TABLE

The coastline provides more than just a backdrop. It provides the very ingredients that define our cooking, dictating not just what we serve, but how we prepare it.

Every morning begins with the same ritual. Before the fire is lit in the kitchen, we look to the water. The state of the tide, the temperature of the air, and the severity of the wind all play a part in what will arrive at the back door later that day.

When cooking with fire, there is no hiding. A piece of fish caught that morning requires nothing more than precise heat, a touch of smoke, and perhaps a simple emulsion made from its own bones. This is the essence of our approach.

"We don't try to manipulate the ingredients into something they are not. We simply try to amplify what they already are."

This philosophy extends beyond the kitchen. The architecture of the space, the ceramics we use, and the wine we pour all share this common thread: a respect for natural materials and minimal intervention.
